Batter foul tips the ball hitting the catcher's mitt. The ball pops up in the air and the catcher catches it. Is it a foul ball out or still a foul tip strike?

Only if it is strike 3.  This is a foul tip since it went sharp and direct to the mitt and then was secured by the catcher.

I stand corrected.  I just assumed it was a third strike scenario.
