How to fix this?

Sit: R2 1 out full count on batter.  Pitch called a strike catcher thinking 3 outs flips ball to PU who Catches ball(not sure why).  R2 advances to third as defense leaves the field 3rd base coach tells runner to score which he does before defense realizes what's going on.  What do you do to fix this?

Not sure what ruleset this is under and I'm not looking at a rulebook, but I'd say the ball is dead as soon as the umpire catches it.

Runner returned to 2B, 2 outs. Get the defense back on the field.

if it's HS rules, the ball is dead immediately once the umpire intentionally touches it.

And if its not HS rules the umpire is to drop the ball as soon as he realizes the error and the play stands.

We were taught that if anyone threw a ball to us, avoid it if at all possible, if you cannot avoid it, just slap it to the ground.

Why slap it? Just let it hit you and fall to the ground
