This happened to a fellow umpire and neither of us knew the answer so I'm asking here.

 

OBR, R3, 2 outs, 2 strikes on the batter. R3 steals home just before the pitch, ends up sliding between the batters legs and hits home plate just before the F2 catches a strike 3. Does the run score?

You DO know the answer to this.  It's just a variant on "R1 steals and reaches second before the batter fouls the pitch.  Does R1 stay at second?"

The answer in both cases is that it depends on whether the runner acquired the base before the TOP -- the timing relative to the action at the plate (foul ball; F2 catching the pitch) does not matter.

Apply this logic:

5.09(a ) (14) With two out, a runner on third base, and two strikes on
the batter, the runner attempts to steal home base on a
legal pitch and the ball touches the runner in the batter’s
strike zone. The umpire shall call “Strike Three,” the batter
is out and the run shall not count; before two are out,
the umpire shall call “Strike Three,” the ball is dead, and
the run counts;
