Replaying a non-protested game?

Let me explain the situation... After the game yesterday, one of our coaches discovered that we pitched an ineligible pitcher. He called the opposing coach and the local league and it was decided that we would replay the five innings in question followed by game two of the double-elimination derby. Is this legal? From what I can find, it seems if the game is not protested before the umpires leave the field, the game is considered "in the book.". Are minor league kids even allowed to play doubleheaders?
