So, I am starting to looking at Chest protectors and I have a question on fit. I am a short fat guy - call it like it is! 5'8" 235. So I am wondering how these should fit? Where should I measure to in front to make sure I am protected? I really don't wanna take one to the gut and some of these protectors look like I'd have a lot hanging out!

Gut shots will happen and while temporarily painful, cause no damage other than a bruise. Very few CP's will completely cover you to your belt anyway.

Measure from the base of your neck to just below your lowest rib. You want something that will cover ALL of this area. If a CP when properly adjusted will not protect all of your ribs, you have the wrong CP.

Common CP lengths are between 12" and 15", some are even longer.

I have a Wilson WV Gold which is 12" and have not problems with the length. I am 5'8" 195
