Ball hits home plate goes in the air in foul territory and is grabbed out of the air without touch the ground only home plate. Is it fair or foul?

all that matters is the position of the ball when it was touched by a fielder. If it was touched over home plate, it's fair.

OP said it was over foul territory when the fielder snagged it ... foul ball.

No, the OP is saying it only hit home plate, not the ground, which doesn't matter.

For the record, home plate is in fair territory, but likely doesn't matter for this scenario.

As stated above, if the ball is in/over foul territory when it was touched by the catcher it's a foul ball.   If the ball was over home plate, it's fair.   If it's over both it's fair.

The plate is part of the ground and not treated any differently.

Really depends where the fielder touches the ball.  Is it in fair or foul territory. If its outside the lines and not over the plate Foul  If its over the plate and or inside ( OR ON ) the lines live fair ball..

And its NOT where the fielder is standing its the position of the ball when/where it is touched
